What You'll Need:
Cookie Dough
1) 1 cup butter
2) 1 cup canned pumpkin
3) 1 cup sugar
4) 1 egg
5) 1 tsp. vanilla extract
6) 2 cups flour
7) 1 tsp. baking soda
8) 1 tsp. baking powder
9) 1 tsp. cinnamon
10) 1/2 tsp. salt
Brown Sugar Icing
1) 3 tbsp. butter
2) 1/2 cup brown sugar
3) 4 tbsp. milk
4) 1 cup powdered sugar
Step 1: Mix butter, pumpkin, sugar, egg, and vanilla in a large bowl
Step 2: Mix all dry ingredients in a large bowl
Step 3: Mix pumpkin mixture and dry mixture together
Step 4: Form dough balls on a parchment paper covered cookie sheet
Step 5: Bake for 11-13 minutes at 400 degrees
Step 6: Mix butter, brown sugar and milk in a small saucepan to create icing
Step 7: Bring mixture to a boil for 2 minutes
Step 8: Add powder sugar to mixture and whisk until smooth
Step 9: Drizzle icing over cookies and enjoy!
