A breakfast that tastes and looks like summer?! YES PLEASE! We spent our lazy Sunday creating a new breakfast favorite, blueberry lemon pop tarts. Not only do these pop tarts taste incredible, they look so beautiful you wont want to eat them. We promise you should at least take one bite!
What you'll need:
For the pop tarts
1) 2 cups all purpose flour
2) 2 tablespoons granulated sugar
3) ½ teaspoon salt
4) 1 cup cold salted butter
5) 2 tablespoons heavy cream
6) 2-3 tablespoons ice water
7) 1 cup lemon curd
8) 2 tablespoons heavy cream (for brushing)
For the blueberry icing
9) 1½ cups powdered sugar
10) 2 tablespoons frozen blueberries
11) ¼ cup heavy cream
Get Started:
Step 1: Mix flour, sugar, and salt together in a large bowl
Step 2: Work butter into flour mixture
Step 3: Pour in heavy cream and ice water
Step 4: Mix everything together using your hands
Step 5: Form 2 equal sized dough disks and wrap each with cling wrap
Step 6: Place dough in fridge for at least 1 hour
Step 7: Remove 1 dough disk from fridge
Step 8: Roll the dough out into a 10" x 13" rectangle
Step 9: Use a ruler and a knife to cut the 10" x 13" rectangle into a 9" x 12" rectangle
Step 10: Use a ruler and a knife to cut the 9" x 12" rectangle into 9 little 3" x 4" rectangles
Step 11: Place rectangles into fridge
Step 12: Repeat steps 7 - 11 for other dough disk
Step 13: Remove the first batch of rectangles (pop tart bases) from fridge and brush the edges with heavy cream
Step 14: Spoon a tablespoon of lemon curd into the center of each pop tart base
Step 15: Place the other rectangles (pop tart tops) over the pop tart bases
Step 16: Press down on the edges with a fork to keep lemon curd inside
Step 17: Bake in oven at 350°F for 30 min
Step 18: Mix powder sugar, crushed frozen blueberries, and heavy cream together in a bowl to create the icing
Step 19: Heat icing mix in microwave for 15 seconds
Step 20: Pour icing over cooled pop tarts and enjoy!
