Loaded Kale Salad

This one is not only for all you veggie lovers, but everyone else too! Before you turn your nose up to greens, this bowl is sure to impress. With all the yummy toppings, you're going to fall in love with this healthy, delicious, and satisfying meal.

Here is what you will be needing:

  1. Organic kale
  2. 1 egg
  3. Sweet potato
  4. Lime, salt, pepper, garlic powder
  5. Red onion
  6. Avocado
  7. Hot sauce (optional)

Start by cutting up your sweet potato and 1/2 of a red onion. Place in pan on medium heat and sauté until your ingredients are softened. Season with salt, pepper and garlic powder. Then add in your chopped kale. Sauté until the kale as shrunk and softened.

Place in bowl

Next, fry your egg and add to the top of the salad.

Place sliced avo on top and squeeze lime juice all over. Drizzle a bit of hot sauce on the top if preferred.

Ta-da!

Mix up all ingredients and enjoy!
